Happy Wednesday friends! I am excited to join in on the What's Up Wednesday posts again this month! 

If you are like me then I truly am literally in shock that it is the end of February! It seems that these past two months have literally flown by. I alluded earlier this month that there had been some very painful events that had happened and honestly as I have begun the healing process the days seem to be flying. These past two months... the same for so many of you I know... have been difficult... painful... and yet wrapped up in love by those closest in my life. At some point I may share more on the blog, but in the meantime, please know how much all of your sweet emails and messages have meant to me. As I look back on this month I am humbly grateful for all of your prayers.

Last night I was talking with my mom and we were saying we couldn't believe how fast these days are going. Please slow down cozy winter days, we are truly enjoying you! We are excited about next month (it is going to be so incredibly special), but I just want to grab onto each day and all of the precious moments! So as we finish February... here are just a few reflections 

What We're Eating this Month...

So some of you know this, but I absolutely love cooking and being in the kitchen preparing nutrious meals for those I love. During the winter (being in the north) there is not as many fresh veggies but I literally crave them. Y'all know that salads and veggies are my absolute favorite foods... so the above mini tacos have been on repeat. Filled with lots of chopped veggies and a bit of barbeque sauce (y'all know I love barbeque sauce and ribs *smiles*) it has been a staple this month. 

I have also been adding a ton of Apple Cider Vinegar into my life and the winter always seems like a perfect time to add this into life. I have been mixing up the veggies and adding splashes of apple cider vinegar and lime and it has been yummy. What I'm Reminiscing About...

The Opportunity Cost of the Sun is in final edits and will be released in the upcoming months. I can't wait to take you into the stories of some people who changed my life forever. 

What I'm Loving...

As I have been doing something new everyday (and terribly behind on sharing ... definitely will share more in March!) - going to the lake often and to the mountains has held some very precious and personal winter moments. 

What I've Been Up To...
Creating, my graduate class, writing, edits, speaking, some academic proposals, and just a lot of behind the scenes personal things. 

What I'm Dreading... 
Honestly absolutely nothing.

What I'm Working on... 
In addition to the shops and editing, I am working on cleaning out and truly embracing more minimalism in so many different areas of life. It is a long process, but one that I have been truly working on recently and a focus this year.

What I'm Thankful for...

What I'm Excited About...

The next few months are going to be absolutely held with some beautiful moments- including the upcoming collaboration with Viking Cruises. I can't wait to take y'all along!

What I'm Watching/Reading... 
Lots and lots of graduate books on political science which I have been loving. In addition to that though... this book...

I am working my way through this one again. I have said this almost at nauseum but there has not been a book that has impacted my faith more over the last 5 years then this book. I need to do an entire blog post on why, but for now, my tender heart will just say that if you are living in a season of broken dreams and spending lots of time weeping... this book is for you. What I'm Listening To...

I shared this over the last year, but on my morning walks I have been listening to different sermons and it has been so encouraging to me. 

What I'm Doing This Weekend... 
I am looking forward to a beautiful weekend!
