a delicious and easy apple bacon and goat cheese summer salad with honey mustard salad dressing

Happy Thursday friends! As y'all know I am always looking for ways to add more veggies to my diet as I believe that food is an essential part of our wellness. I came across this salad a couple of weeks ago and decided to modify it to make it healthier and to add in ingredients we had already in our home. This easy and healthy summer salad is a new favorite of ours and I thought I would share it with y'all! It is easy to make and is extremely healthy, especially if you are like me and you are wanting to get more veggies into your body. 

Here are the ingredients that you will need:

For the Salad:
Fresh Spring Salad Mix (approximately 10oz)
1 Granny Smith Apple thinly sliced (Health Benefit Post Can be Found HERE)
4 Ounces of Goat Cheese
4 Slices of Organic Bacon
1/2 of Organic Onion thinly sliced (Health Benefit Post Can be Found HERE)
1/4 Cup Roasted Sunflower Seeds

For the Honey Mustard Salad Dressing:
3 tsp Honey
2 tsp Dijon Mustard
2 Tbsp Apple Cider Vinegar
1/8 cup Extra Virgin Olive Oil 
salt and pepper to taste

We picked up our greens from our favorite local farm and the mixed those together with the thinly sliced apples, crumbled our organic bacon, added the thinly sliced onions and roasted sunflower seeds. On the top I added our goat cheese. 

Instead of adding the dressing onto to the salad and tossing it to coat, we found that a little with this salad combination goes a long way, so we simply added our own dressing to each of our salads. 

The yummy tartness of the granny smith apples with the savory goat cheese a bit of sweetness with the dressing and the saltiness of the bacon all together has made this a beautiful and favorite lunch at our home! Let me know your thoughts!
