Happy Thursday friends! I wanted to share with y'all a simple and easy pesto recipe that is easy to make and is extremely healthy, especially if you are like me and you are always looking to get more greens and vegetables into your body. I found several recipes online for pea pesto and modified it to meet my own health goals and needs!
1 cup of frozen peas
1/4 cup organic walnuts
1/4 cup of organic parmesan cheese
2 tablespoons organic olive oil
1-2 teaspoons of lemon juice
1-2 teaspoons of lemon juice
1 tablespoon water
2 cloves of garlic
1/4 tsp salt
1/4 tsp pepper
Blend together in a food processor and chill in refrigerator for at least 30 minutes before serving. We have found that letting it sit overnight is the best. We use the Hamilton Beach 12-cup stack and snap food processor that we purchased on Amazon. You can find it HERE. It is wonderful. It is easy to use and easy to clean!
I use this as a dip with veggies, on sandwiches as a substitute for mayo, as a garnish for fish, etc. It takes about 5 minutes to make and is the easiest recipe.
It is also extremely healthy. There are so many health benefits to walnuts, lemons, peas, and garlic. The recipe is so easy and can be modified for your health needs.
